
Still Producing Sap For a Few More Days

We are having a good season. We hit our long-term average for annual production on April 7 and we are looking forward to more sap through the weekend. Notable this year has been the incredible volume of sap that we have gathered during peak runs – we have spent several nights boiling around the clock to keep up with the flow. Since the sap sugar has been lower than average, we need a high volume to meet our goals. We were making dark syrup with excellent flavour which our customers are sure to enjoy!
The snow and cold weather we received this week is welcomed by maple producers. Not only does it recharge the trees with sap, but it also delays tree development and their emergence from dormancy. The sap changes chemistry when the trees move from their dormant state rendering it unsuitable for maple syrup; with the current weather we are hopeful that we will be able to make quality syrup for a few more days.
Our woods are coming alive with wildlife too. Migratory birds are returning, mammals such as raccoons are coming out of hibernation and the deer are moving back into their breeding habitat from wintering areas. You may be lucky enough to see birds and animals in the sugar bush when you visit!
The weather forecast for this weekend looks decent and it will be the last opportunity to see the Kettle Boys and Shanty Men in action this year. The trails and demonstration sites are wet and snowy so please wear suitable footwear and clothing.
